15 MINUTE FRITTATA
- Turn on oven 180C
- 4 Eggs
- ¼ cup coconut milk, whisk well
- Add julienne zucchini
- Add quartered cherry tomatoes
- Add small cubes goat fetta
- Cayenne pepper- pinch
- Celtic sea salt
- Pour into coconut oiled fry pan with oven proof handle
- Keep on med-hot for 1-2 mins then put in oven
- Should be ready in 7-10 mins
- Serve with fresh rocket & avocado
